Flat Iron Steak Sandwich

Ingredients (makes 4 sandwiches)

Steak

  • 1.25–1.5lb Chop House Flat Iron Steak

  • Chop House sauce packet

Onions + sandwich

  • 1 large yellow onion, thinly sliced
  • 1 tbsp butter or olive oil
  • 4 sandwich rolls (hoagie rolls, ciabatta, or sourdough slices)
  • 4–8 slices provolone or Swiss (or white cheddar)
  • Optional add-ons: arugula, sliced tomatoes, pickled jalapeños, sautéed mushrooms

Garlic aioli

  • 1/3 cup mayo (or Greek yogurt + mayo mix)
  • 1 small garlic clove, grated (or 1/2 tsp garlic powder)
  • 1 tsp lemon juice
  • Pinch of salt + pepper

Steps

  1. Make the aioli
    Stir mayo, garlic, lemon juice, salt, and pepper. Refrigerate until ready.

  2. Caramelize onions
    Heat butter/oil in a skillet over medium. Add onions + a pinch of salt.
    Cook 10–15 minutes, stirring, until soft and golden-brown. Remove.

  3. Reheat the steak
    Heat a skillet (or grill) to high. Reheat 2–3 minutes per side.

  4. Slice
    Slice steak thinly against the grain and top with sauce packet.

  5. Toast + assemble
    Toast rolls (optional). Spread aioli, add steak, onions, and cheese.

  6. Melt the cheese
    Put assembled sandwiches in a 400°F oven 3–5 minutes or cover in a skillet on low until cheese melts
